Another great recipe, in my book, because you just add all of the ingredients and turn on the slow cooker!  Easy peasy

Here is the grocery list:

  • 2 lbs pork tenderloins
  • 3 (15-ounce) cans black beans
  • 1 (16-ounce) jar salsa
  • 1/2 cup chicken broth
  • 1 red bell pepper
  • 1 white onion
  • 1 tsp dried oregano
  • 1 tsp ground cumin
  • 3 tsp chilli powder

Cut the pork into 2 inch strips.  Chop the vegetables into long strips.  My wife (Jessica) gave me a good tip and told me to cut peppers and onions into pretty big chunks rather than small pieces when slow cooking.  I took her advice and it turned out great.  Since the veggies end up soft you want them to be bigger.  Toss everything in and cook on low for about 6 – 8 hours.

This recipe is very easy and very tasty!  Here is the grocery list:

  • 3 pounds boneless skinless chicken breast
  • 1 (16-ounce) jar salsa
  • 1 (1.25 ounce) package dry taco seasoning mix
  • 1 lime, juiced
  • 3 tablespoons chopped fresh cilantro
  • 1 green pepper
  • 1 red pepper
  • 1 white onion

Chop the peppers and onion into a 4 inch slices.  Dump the salsa into the slow cooker.  Then, put the taco seasoning, lime juice, green peppers, onions, and cilantro in.  Stir it up.  Add the chicken breasts and stir it up again.  Cover and cook on low for 6 – 8 hours.
